Ingredients

Scale

For the Banana Bread Cake:

  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt (for extra moisture)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  • Prepare the Cake:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
    • In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
    • In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and mashed bananas.
    • Gradually add the dry ingredients to the banana mixture, mixing until just combined. Stir in the sour cream or Greek yogurt for extra moisture.
    • Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely in the pan.
  • Make the Cream Cheese Frosting:
    • In a medium bowl, beat together the softened cream cheese and butter until smooth.
    • Gradually add powdered sugar, 1/4 cup at a time, and continue to beat until smooth and creamy.
    • Stir in the vanilla extract and a pinch of salt. Adjust the consistency by adding more powdered sugar if necessary for thicker frosting.
  • Assemble:
    • Once the banana bread cake has cooled, spread the cream cheese frosting evenly on top.
    • Slice and serve. Enjoy the fluffy banana bread cake with the rich cream cheese frosting!

Notes

  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate and enjoy within 5-7 days.
  • Banana Tips: The riper the bananas, the better! Overripe bananas add natural sweetness and moisture to the cake.
  • Frosting Variation: For a twist, you can add a teaspoon of cinnamon or a dash of lemon zest to the frosting for added flavor.
  • Gluten-Free Option: Substitute the all-purpose flour with a gluten-free flour blend if needed.
