Ingredients

Scale
  • 1 lb ground beef

  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup elbow macaroni (or any pasta of your choice)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  • Cook the Ground Beef:
    • In a large pot, heat olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned and fully cooked, about 6-8 minutes.
    • Drain any excess fat from the pot.
  • Add the Vegetables and Garlic:
    • Add the chopped onion, carrots, celery, and garlic to the pot. Cook for 4-5 minutes, until the vegetables begin to soften.
  • Add the Broth and Tomatoes:
    • Stir in the diced tomatoes (with their juices), tomato sauce, and beef broth.
    • Season with oregano, basil, salt, and pepper. Bring the soup to a simmer over medium heat, and cook for about 10 minutes.
  • Cook the Pasta:
    • Add the elbow macaroni to the pot, stirring to combine. Let the soup simmer for another 8-10 minutes, or until the pasta is tender.
  • Serve:
    • Taste the soup and adjust the seasoning if needed.
    • Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot and enjoy!
