For the Sponge Cake:

  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour

  • Pinch of salt

For the Berry Cream Filling:

  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
  • 2 tablespoons fresh lemon juice

Instructions

1️⃣ Make the sponge cake:
Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper. In a medium bowl, whisk eggs and sugar until light and fluffy, about 5 minutes. Add vanilla extract. In a separate bowl, sift together flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.

2️⃣ Bake the cake:
Pour the batter into the prepared pan and smooth the top. Bake for 10–12 minutes, or until the cake is golden and springs back when gently pressed. Once baked, immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the cake up in the towel while it’s still warm. Let it cool completely.

3️⃣ Prepare the berry cream filling:
In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold in the fresh berries and lemon juice.

4️⃣ Assemble the Swiss roll:
Once the cake has cooled, unroll it and spread an even layer of berry cream on top. Carefully re-roll the cake without the towel, ensuring it is snug but not too tight.

5️⃣ Chill and serve:
Refrigerate the rolled cake for at least 30 minutes to set the filling. Slice into pieces and garnish with additional fresh berries if desired.
