Ingredients

Scale
  • 1 unbaked 9-inch pie crust (homemade or store-bought)
  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup evaporated milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions

  • Prepare Sweet Potatoes:
    • Preheat your oven to 350°F (175°C).
    • Peel and boil sweet potatoes until tender, about 20-25 minutes. Mash until smooth and measure out 2 cups.
  • Mix the Filling:
    • In a large mixing bowl, combine mashed sweet potatoes, granulated sugar, brown sugar, and melted butter. Mix until smooth.
    • Add evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until fully combined.
  • Assemble the Pie:
    • Place the pie crust into a 9-inch pie pan. Pour the sweet potato mixture into the crust, spreading it evenly.
  • Bake:
    • Bake the pie in the preheated oven for 50-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.
    • Cool the pie on a wire rack for at least 1 hour before slicing.
  • Serve:
    • Serve at room temperature or chilled, with a dollop of whipped cream or a scoop of vanilla ice cream if desired.

Notes

  • Make Ahead: Sweet potato pie can be made up to 2 days in advance. Store in the refrigerator and let it come to room temperature before serving.
  • Flavor Boost: Add 1 tbsp of orange juice or zest to the filling for a citrusy twist.
  • Crust Shield: Use a pie crust shield or aluminum foil to prevent the edges from overbrowning.
