The Breakfast Tortilla Stack is a delicious and satisfying breakfast or brunch dish made with layers of tortillas, scrambled eggs, cheese, and your favorite breakfast toppings. It’s an easy-to-make, customizable meal that’s perfect for feeding a crowd or meal prepping for the week ahead. The warm tortillas, cheesy eggs, and savory additions make each bite feel like a breakfast taco in every layer!

  • 6 small flour tortillas (or corn tortillas)
  • 6 large eggs
  • 1/2 cup milk or heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cooked bacon, crumbled (or sausage, chorizo, or veggies for a vegetarian version)
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter (for cooking)
  • Salsa, sour cream, or guacamole (optional, for serving)
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Prepare the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
  • Cook the Vegetables (optional): In a skillet, heat a little olive oil over medium heat. Sauté the bell peppers and onions for about 3-4 minutes until they are softened. Remove from heat and set aside.
  • Scramble the Eggs: In the same skillet, melt butter or add oil over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and cooked through. Remove from heat.
  • Assemble the Tortilla Stack: Preheat the oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish. Start by placing one tortilla in the bottom of the dish. Top with a layer of scrambled eggs, cheese, cooked bacon (or other protein), and sautéed vegetables (if using). Repeat this process, layering tortillas, eggs, cheese, and toppings until you have used up all the ingredients, ending with a tortilla on top.
  • Bake the Stack: Place the stacked tortillas in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the stack is heated through.
  • Serve: Once baked, remove from the oven, and let it cool for a few minutes before slicing. Serve with salsa, sour cream, or guacamole and garnish with fresh cilantro.

Notes

  • Make-Ahead: You can assemble the tortilla stack the night before and refrigerate it overnight. Just bake it the next morning for a quick and easy breakfast.
