  • 1 loaf rustic baguette or ciabatta, sliced
  • 2 cups cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp sea salt
  • ½ tsp freshly cracked black pepper
  • 1 bunch fresh basil, leaves torn
  • 8 oz burrata cheese
  • Balsamic glaze, for drizzling

Instructions

1️⃣ Toast the Bread: Preheat the oven to 375°F (190°C). Arrange the bread slices on a baking sheet. Brush each slice lightly with olive oil. Toast in the oven for 8–10 minutes until golden and crisp.

2️⃣ Prepare the Topping: In a bowl, combine halved cherry tomatoes, balsamic vinegar, salt, and pepper. Toss to coat evenly and let sit for 5 minutes to marinate.

3️⃣ Assemble the Bruschetta: Place a piece of burrata on each toasted bread slice. Top with the marinated tomatoes and a few torn basil leaves.

4️⃣ Finish and Serve: Drizzle balsamic glaze over the top of each bruschetta and serve immediately while the bread is still warm.

Notes

  • For a bit of extra flavor, drizzle with a little extra olive oil before serving.
  • Burrata can be substituted with fresh mozzarella if preferred.
