These Buttery Pecan Snowball Cookies are a melt-in-your-mouth holiday classic!   • 1 cup unsalted butter, softened
  • 1 cup powdered sugar (plus extra for rolling)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 1 cup finely chopped pecans

Instructions

1️⃣ Prepare the Dough:
Preheat the oven to 350°F (175°C). In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract. Gradually add the flour and salt, mixing until just combined. Stir in the chopped pecans.

2️⃣ Form the Cookies:
Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet about 1 inch apart.

3️⃣ Bake the Cookies:
Bake for 12-15 minutes, or until the bottoms are lightly golden. Be careful not to overbake—these cookies should be soft and delicate.

4️⃣ Roll in Powdered Sugar:
Once the cookies are done, allow them to cool for 5 minutes on the baking sheet. Then, while still warm, roll the cookies in powdered sugar to coat completely.

5️⃣ Cool and Serve:
Transfer the cookies to a wire rack to cool completely. If desired, roll them in powdered sugar again before serving.

Notes

  • Store cookies in an airtight container at room temperature for up to 1 week.
  • These cookies can also be made ahead and frozen for up to 3 months. Just roll them in powdered sugar after thawing.
