Cake Batter Cookies are a fun and colorful treat, combining the rich flavor of cake mix with a soft, chewy texture. These cookies are perfect for celebrations or any time you want a quick and easy homemade dessert with a sweet, nostalgic flavor.   • 1 box (15.25 oz) vanilla cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup rainbow sprinkles
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour (optional for thicker cookies)

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, combine the cake mix, vegetable oil, eggs, and vanilla extract. Stir until the mixture comes together into a thick dough.
  • If you’d like thicker cookies, mix in the optional flour.
  • Fold in the rainbow sprinkles, making sure they are evenly distributed throughout the dough.
  • Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are lightly golden. The center should still be soft.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a different twist, you can use chocolate cake mix or any other flavored cake mix.
  • For added texture, try adding white or milk chocolate chips to the dough.
  • Store leftover cookies in an airtight container for up to 3 days.
