Ingredients

Scale
  • 2 cups mashed potatoes (cooled or leftover)
  • 1 large egg
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons all-purpose flour (or as needed)
  • 2 tablespoons chopped chives (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Oil spray or melted butter (for greasing muffin tin)

Instructions

1️⃣ Preheat the oven: Set your oven to 375°F (190°C) and lightly grease a mini muffin tin with oil spray or melted butter.

2️⃣ Mix the ingredients: In a mixing bowl, combine the mashed potatoes, egg, cheddar cheese, Parmesan, flour, chives (if using), garlic powder, salt, and pepper. Mix until a thick, smooth batter forms.

3️⃣ Portion into muffin tin: Spoon the mixture into the prepared muffin tin, filling each cup about ¾ full. Smooth the tops for even baking.

4️⃣ Bake to golden perfection: Bake for 25–30 minutes, or until the puffs are golden brown and slightly crispy around the edges.

5️⃣ Cool and serve: Allow the puffs to cool for 5 minutes before gently removing them from the tin. Serve warm as a snack, side, or appetizer.

Notes

  • For an extra crispy exterior, add a sprinkle of breadcrumbs on top before baking.
  • Swap cheddar for Gruyère or mozzarella for a flavor twist.
  • These puffs are freezer-friendly—reheat in an oven or air fryer for best results.
