For the Soup:

  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock (or chicken broth)
  • 1 cup heavy cream
  • 1 cup milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup cooked shrimp, peeled and chopped
  • 1 cup crab meat (fresh or imitation)
  • 1 cup white fish fillets (such as cod or haddock), chopped
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground thyme
  • Salt and pepper to taste

For the Bread Bowls:

  • 4 small round sourdough bread loaves (or any sturdy bread)
  • 1 tablespoon olive oil (for brushing)

Instructions

  • Preheat the oven to 350°F (175°C). Cut off the tops of the bread loaves and hollow out the centers, leaving about an inch of bread around the edges. Brush the inside and outside of the bread bowls with olive oil. Place the bread bowls on a baking sheet and bake for about 10 minutes, until they are golden and crispy. Set aside.
  • In a large pot, melt butter over medium heat. Add the chopped onion and garlic and sauté for about 3 minutes, until softened.
  • Stir in the flour and cook for 1 minute to form a roux.
  • Gradually add the seafood stock, whisking constantly to avoid lumps. Stir in the milk and heavy cream and bring to a simmer.
  • Add the shredded cheddar cheese, paprika, thyme, and salt and pepper. Stir until the cheese has melted and the soup is smooth and creamy.
  • Add the shrimp, crab, and fish to the soup. Cook for 5–7 minutes, or until the seafood is heated through and tender.
  • Taste the soup and adjust seasoning if needed. If the soup is too thick, add a little more milk to reach your desired consistency.
  • Ladle the soup into the prepared bread bowls and serve immediately. Optionally, garnish with extra shredded cheese or chopped parsley for added flavor.

Notes

  • Feel free to use any seafood you prefer, such as scallops or lobster, for a different variation.
  • To make the soup even creamier, you can add extra cheese or a dollop of sour cream before serving.
  • If you don’t have bread bowls, you can serve the soup in any soup bowl with crusty bread on the side.
  • Store leftover soup in an airtight container in the refrigerator for up to 3 days. However, the bread bowls should be eaten immediately for the best texture.
