Chicken Broccoli Alfredo

This Chicken Broccoli Alfredo is a creamy, comforting dish that pairs tender chicken and crisp broccoli with a rich and velvety Alfredo sauce. Served over pasta, it’s a hearty, satisfying meal that’s perfect for family dinners or a cozy night in.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, sliced into strips
  • Salt and pepper, to taste
  • 3 cups broccoli florets, steamed or blanched
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 12 oz fettuccine or penne pasta, cooked according to package instructions
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook for 5-6 minutes, or until the chicken is golden brown and fully cooked. Remove from the skillet and set aside.
  • Prepare the Alfredo Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
    • Pour in the heavy cream, stirring to combine. Let the cream simmer for 2-3 minutes, allowing it to thicken slightly.
  • Add the Cheese and Seasoning:
    • Stir in the Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Continue stirring until the sauce becomes smooth and creamy.
  • Combine the Ingredients:
    • Add the cooked pasta, steamed broccoli, and chicken strips to the skillet with the Alfredo sauce. Toss everything together until well-coated in the creamy sauce.
  • Serve:
    • Serve the Chicken Broccoli Alfredo immediately, garnished with chopped parsley for a burst of color and freshness.

Notes

  • Customize: Add extra vegetables like mushrooms or spinach for more flavor and nutrients.
  • Make It Lighter: Use half-and-half or whole milk in place of heavy cream for a lighter version.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or cream if the sauce thickens too much.
