  • 1/2 teaspoon salt (or to taste)
  • 2 bay leaves
  • 1 tablespoon fresh lemon juice (optional, for a burst of freshness)
  • Fresh parsley or dill (for garnish, optional)

Instructions

  1. Sauté the Vegetables:
    • Heat the olive oil in a large pot over medium heat.
    • Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables begin to soften.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Add the Broth and Seasonings:
    • Pour in the chicken broth and bring the mixture to a boil.
    • Stir in the shredded chicken, egg noodles, thyme, parsley, black pepper, salt, and bay leaves.
  3. Simmer the Soup:
    • Reduce the heat to medium-low and let the soup simmer for 15-20 minutes, or until the noodles are tender and the flavors have melded together.
  4. Finish and Serve:
    • If desired, stir in fresh lemon juice for a bright, tangy flavor.
    • Remove the bay leaves and discard them.
