For the Pudding:

  • 1 cup Arborio or medium-grain rice
  • 4 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (plus extra for garnish)
  • 2 tbsp unsalted butter

Instructions

  • Cook the Rice:
    • In a medium saucepan, combine the rice and 1 1/2 cups of milk. Cook over medium heat, stirring occasionally, until the rice is tender and most of the milk is absorbed, about 15-20 minutes.
  • Make the Pudding:
    • In a separate bowl, whisk together the remaining 2 1/2 cups of milk, sugar, salt, and beaten eggs. Gradually pour the milk mixture into the cooked rice while stirring constantly to prevent the eggs from curdling.
    • Continue to cook the mixture over medium heat, stirring constantly, for about 10 minutes, or until it thickens to a custard-like consistency.
  • Add Flavor:
    • Once the pudding has thickened, remove from heat and stir in the vanilla extract, ground cinnamon, and butter.
  • Serve and Garnish:
    • Spoon the pudding into individual serving bowls. Let it cool slightly, then refrigerate for at least 1 hour to allow it to set.
    • Before serving, sprinkle with additional cinnamon for garnish if desired.
  • Serve:
    • Serve chilled or at room temperature. Enjoy!
