Delicious Homemade Coffee Cake Recipe

This homemade coffee cake is soft, moist, and layered with a buttery cinnamon-sugar streusel. Perfect for breakfast, brunch, or a cozy dessert, it’s an irresistible treat that pairs wonderfully with a cup of coffee or tea.

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt

For the Streusel Topping and Filling:

  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
  • Make the Streusel:
    • In a medium bowl, combine brown sugar, granulated sugar, cinnamon, nutmeg (if using), and flour. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in nuts, if desired. Set aside.
  • Prepare the Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Cream Butter and Sugar:
    • In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3 minutes.
  • Add Eggs and Vanilla:
    • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Mix the Batter:
    • Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Begin and end with the dry ingredients, mixing until just combined.
  • Assemble the Coffee Cake:
    • Spread half of the batter evenly in the prepared baking dish. Sprinkle half of the streusel mixture over the batter.
    • Add the remaining batter, spreading it evenly, and sprinkle the rest of the streusel on top.
  • Bake the Cake:
    • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
    • Let the cake cool in the pan for 15 minutes before slicing. Serve warm or at room temperature.

Notes

  • For extra sweetness, drizzle a glaze made from powdered sugar and milk over the cooled cake.
  • Swap nuts for chocolate chips or leave them out entirely if preferred.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
