  • 1/4 teaspoon almond extract (optional)
  • 2 tablespoons milk (or as needed for dough consistency)
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium bowl, whisk together the flour, cornmeal, baking powder, and salt.
  • In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
  • Beat in the egg, vanilla extract, and almond extract (if using).
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined. If the dough feels too dry, add milk a teaspoon at a time until it reaches a soft but slightly firm consistency.
  • Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet about 2 inches apart.
  • Gently flatten each cookie with the bottom of a glass or your fingers to achieve a round shape.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • If desired, dust the cooled cookies with powdered sugar before serving.
