- 1/2 cup cornmeal
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 2 tablespoons milk (or as needed for dough consistency)
- Powdered sugar for dusting (optional)
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, cornmeal, baking powder, and salt.
- In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
- Beat in the egg, vanilla extract, and almond extract (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. If the dough feels too dry, add milk a teaspoon at a time until it reaches a soft but slightly firm consistency.
- Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet about 2 inches apart.
- Gently flatten each cookie with the bottom of a glass or your fingers to achieve a round shape.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
