Instructions

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the Cranberry-Orange Glaze:
    In a small saucepan, combine the cranberries, orange juice, honey, and Dijon mustard. Bring to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the cranberries burst and the sauce thickens. Remove from heat and stir in the fresh orange zest.
  • Prepare the Salmon:
    Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets and season with salt and pepper.
  • Glaze the Salmon:
    Spoon a generous amount of the cranberry-orange glaze over each salmon fillet, reserving some for serving.
  • Bake the Salmon:
    Bake the salmon for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  • Serve:
    Once the salmon is cooked, remove from the oven and drizzle with the remaining glaze. Garnish with freshly chopped parsley and serve immediately.
