Ingredients

Scale
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (optional, for topping)
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley (optional, for garnish)

Instructions

  1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Brussels Sprouts:
Trim the ends off the Brussels sprouts and cut them in half. Place them on the prepared baking sheet. Drizzle with olive oil, and sprinkle with garlic powder, salt, and black pepper. Toss to coat the sprouts evenly.
  3. Roast the Brussels Sprouts:
Roast the Brussels sprouts in the preheated oven for 20-25 minutes, shaking the pan halfway through to ensure even cooking. They should be golden brown and crispy on the edges when done.
  4. Make the Creamy Sauce:
While the Brussels sprouts are roasting, melt the butter in a medium saucepan over medium heat. Add the heavy cream and bring it to a simmer. Stir in the Parmesan and mozzarella cheeses and cook for 2-3 minutes until the sauce is smooth and creamy.
  5. Assemble and Bake:
Once the Brussels sprouts are roasted, transfer them to a baking dish. Pour the creamy sauce over the sprouts and toss gently to coat. If desired, sprinkle breadcrumbs on top for a crunchy topping. Bake for an additional 10-15 minutes, until the sauce is bubbly and the top is golden brown.
  6. Garnish and Serve:
Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley if desired.

Notes

  • For a Crunchier Topping: Add more breadcrumbs and a sprinkle of extra Parmesan cheese before baking.
  • Make-Ahead Tip: You can prepare the Brussels sprouts and creamy sauce ahead of time and assemble the dish just before baking.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
