  • 2 cups potatoes, diced (about 2 medium potatoes)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

  • 4 cups chicken or vegetable broth
  • 2 cups whole milk or heavy cream (for a richer taste)
  • 3 tbsp butter
  • 1 tbsp flour (optional, for thickening)
  • Salt and pepper to taste
  • 1/2 tsp dried thyme or fresh thyme (optional)
  • 1/4 tsp paprika (optional)
  • 1/2 cup cooked bacon bits or crumbled (optional, for added flavor)
  • Fresh parsley or chives for garnish (optional)

Instructions

  • Cook the vegetables: In a large pot, melt the butter over medium heat. Add the onion, celery, and garlic. Sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.
  • Prepare the broth: Stir in the potatoes and corn, followed by the chicken or vegetable broth. Bring the mixture to a boil, then reduce to a simmer. Cook for about 10-15 minutes or until the potatoes are tender.
  • Thicken the soup (optional): If you want a thicker chowder, stir in the flour and cook for 1-2 minutes, then slowly add the milk or cream. Stir continuously until the soup thickens.
  • Add seasoning: Season the chowder with salt, pepper, thyme, and paprika. Stir to combine.
  • Blend (optional): For a smoother texture, you can blend part of the soup using an immersion blender or regular blender, then return it to the pot.
  • Finish and serve: Stir in the cooked bacon bits, if using, and let the chowder heat through. Serve hot, garnished with fresh parsley or chives if desired.

Notes

  • For a vegetarian version, use vegetable broth and skip the bacon.
  • You can adjust the thickness of the chowder by adding more milk or broth if you prefer a lighter texture.
  • For extra flavor, try adding a pinch of cayenne pepper for a bit of heat.
