For the Crispy Chicken:

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs (for extra crunch)
  • 1/2 cup vegetable oil (for frying)

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar

For Garnish:

  • Chopped green onions (optional)
  • Sesame seeds (optional)

 

Instructions

  • For the crispy chicken: In a shallow bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, beat the egg. Place the panko breadcrumbs in a third bowl.
  • Dip each piece of chicken into the flour mixture, then into the beaten egg, and finally coat it in panko breadcrumbs. Press gently to ensure an even coating.
  • Heat vegetable oil in a large skillet over medium heat. Once hot, fry the chicken pieces in batches for about 4-5 minutes per side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  • For the Bang Bang sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth and well combined. Adjust the heat by adding more sriracha if desired.
  • Once all the chicken is crispy, toss it in the prepared Bang Bang sauce until evenly coated.
  • Serve immediately, garnished with chopped green onions and sesame seeds, if desired.

Notes

  • For a lighter version, you can bake the chicken in the oven at 400°F (200°C) for about 20-25 minutes instead of frying.
  • Adjust the spiciness of the sauce to your preference by adding more or less sriracha.
  • This dish pairs well with steamed rice, vegetables, or a simple salad.
