Cake:

  • 2 cups all-purpose flour
  • 1 cup unsweetened dark cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Chocolate Ganache Frosting:

  • 8 oz semi-sweet dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter, cubed
  • 1 tsp vanilla extract

Instructions

1️⃣ Prepare the Cake: Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans. In a large bowl, whisk flour, cocoa powder, baking powder, baking soda, salt, and sugar. Add eggs, milk, oil, and vanilla, mixing until smooth. Stir in boiling water until well combined (the batter will be thin). Divide the batter evenly between the cake pans and bake for 30–35 minutes. Cool completely.

2️⃣ Make the Ganache: Place chopped chocolate in a heatproof bowl. In a small saucepan, heat cream and butter over medium heat until it just begins to simmer. Pour over the chopped chocolate and let sit for 3–5 minutes. Stir until smooth and glossy, then mix in vanilla extract. Allow ganache to cool and thicken slightly before frosting the cake.

3️⃣ Assemble the Cake: Place one layer of cake on a serving platter. Spread a layer of ganache over the top, smoothing it out evenly. Add the second cake layer and cover the entire cake with the remaining ganache.

4️⃣ Chill and Serve: Let the cake set in the refrigerator for at least 30 minutes to allow the ganache to firm up before slicing and serving.
