  • 2 tbsp water
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

1️⃣ Prepare the Crust:

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Combine chocolate cookie crumbs and melted butter until well mixed.
  3. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes and set aside.

2️⃣ Make the Cheesecake Filling:

  1. In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla extract.
  2. Add eggs one at a time, beating well after each addition.
  3. Fold in the melted chocolate until fully incorporated.
  4. Pour the filling over the crust and smooth the top.

  1. Place the springform pan in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides.

  1. In a saucepan, combine cherries, sugar, water, and cornstarch.
  2. Cook over medium heat until thickened, then stir in lemon juice. Cool completely.

  2. Chill in the refrigerator for at least 4 hours before serving.
