Instructions

  • Prepare the Chocolate Custard:
    In a medium saucepan, whisk together the sugar, cocoa powder, flour, and salt. Slowly add the milk, whisking continuously to ensure there are no lumps. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble (about 5-7 minutes).
  • Temper the Egg Yolks:
    In a separate bowl, whisk the egg yolks. Gradually add about 1/2 cup of the hot chocolate mixture into the egg yolks, stirring constantly to avoid curdling the eggs. Once tempered, slowly whisk the egg mixture back into the saucepan with the rest of the chocolate mixture. Continue cooking for 2-3 minutes until thickened.
  • Finish the Filling:
    Remove the saucepan from the heat and stir in the butter and vanilla extract. Let the filling cool slightly before pouring it into the prepared pie crust.
  • Make the Meringue:
    In a clean mixing bowl, beat the egg whites and cream of tartar using an electric mixer on medium speed until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, and continue beating until stiff, glossy peaks form. Beat in the vanilla extract.
  • Assemble the Pie:
    Spread the meringue evenly over the chocolate filling, ensuring the edges of the meringue touch the crust to prevent shrinking. Use the back of a spoon to create peaks on top of the meringue.
  • Bake:
