Ingredients

Scale

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup whole milk

For the Gooey Caramel Sauce:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease and flour a 9×9-inch square or round cake pan and set aside.
  • Make the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Add Wet Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the cooled brewed coffee and milk. Start and finish with the dry ingredients. Mix until just combined—do not overmix.
  • Bake the Cake: Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  • Make the Gooey Caramel Sauce: While the cake is cooling, prepare the caramel sauce. In a medium saucepan, melt the butter over medium heat. Add the brown sugar and heavy cream, stirring constantly until the sugar dissolves and the mixture begins to boil. Let it simmer for 3-4 minutes, then remove from heat and stir in the vanilla extract and a pinch of salt.
  • Assemble the Cake: Once the cake has cooled, pour the gooey caramel sauce over the top, allowing it to seep into the cake and form a luscious, sweet glaze. If you prefer a thicker caramel layer, you can serve the cake with additional caramel sauce on the side.
  • Serve: For an extra indulgence, serve slices of the cake warm with a scoop of vanilla ice cream or whipped cream. Enjoy!

Notes

  • Storage: Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Reheat individual slices in the microwave for a warm treat.
  • Coffee Substitution: If you don’t drink coffee, you can substitute the brewed coffee with hot water or milk for a less intense flavor.
  • Caramel Sauce Variations: For a deeper flavor, try adding a splash of bourbon or dark rum to the caramel sauce while it simmers.
  • Serve Warm: This cake is best served slightly warm so the caramel sauce remains gooey.
