  • 2 ripe avocados, peeled and pitted
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely diced
  • 1/4 cup fresh cilantro or parsley, chopped (optional)
  • 1 tablespoon toasted sesame seeds (optional for garnish)

Instructions

  • Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
  • While the pasta cools, prepare the avocado dressing: In a medium bowl, mash the avocado with a fork until smooth. Add the olive oil, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
  • Add the avocado dressing to the pasta mixture and toss gently to coat the pasta and vegetables.
  • Garnish with fresh cilantro or parsley, and sprinkle with toasted sesame seeds, if desired.
