Banana Bread Muffins are a delicious twist on the classic banana bread. These moist, soft muffins are packed with ripe bananas, offering a perfect balance of sweetness and flavor. For the Muffins:

  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup milk (any kind)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  • Prepare the Oven and Muffin Tin:
    • Preheat the oven to 350°F (175°C).
    • Grease a muffin tin or line it with paper liners.
  • Mix Wet Ingredients:
    • In a large bowl, mash the ripe bananas with a fork until smooth.
    • Stir in the granulated sugar, melted butter, egg, and vanilla extract until well combined.
  • Mix Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
    • Add the milk and mix until the batter is smooth. If desired, fold in chopped walnuts or chocolate chips.
  • Fill the Muffin Tin:
    • Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake:
    • Bake for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
    • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  • Serve:
    • Serve warm or at room temperature. These muffins are perfect for breakfast, brunch, or as an afternoon snack.

Notes

  • For added flavor, try substituting 1/2 teaspoon of almond extract for vanilla extract.
  • You can freeze these muffins for up to 2 months. Simply place them in a zip-top bag or airtight container and reheat when needed.
  • If you prefer a sweeter muffin, increase the sugar to 2/3 cup.
