For the Muffins:
- 2 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional)
- 1/4 cup milk (any kind)
- 1/2 cup chopped walnuts or chocolate chips (optional)
- Prepare the Oven and Muffin Tin:
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin or line it with paper liners.
- Mix Wet Ingredients:
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir in the granulated sugar, melted butter, egg, and vanilla extract until well combined.
- Mix Dry Ingredients:
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Add the milk and mix until the batter is smooth. If desired, fold in chopped walnuts or chocolate chips.
- Fill the Muffin Tin:
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake:
- Bake for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
