Ingredients

Scale
  • For the Crust:
    • 2 cups vanilla wafer crumbs
    • 5 tbsp unsalted butter, melted
    • 2 tbsp granulated sugar
  • For the Cheesecake Filling:
    • 24 oz cream cheese, softened
    • ¾ cup granulated sugar
    • ½ cup sour cream
    • 1 tsp vanilla extract
    • 3 large eggs
    • 1 medium banana, mashed
  • For the Banana Pudding Layer:
    • 1 box (3.4 oz) banana pudding mix
    • 2 cups milk
    • 2 large bananas, sliced
  • For the Garnish:
    • 1 cup whipped cream
    • Crushed vanilla wafers
    • Fresh banana slices (optional)

Instructions

1️⃣ Prepare the Crust: Preheat your oven to 325°F (165°C). In a medium bowl, mix the vanilla wafer crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.

2️⃣ Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the sour cream, vanilla extract, and mashed banana, mixing until fully incorporated. Add the eggs one at a time, beating well after each addition.

3️⃣ Bake the Cheesecake: Pour the cheesecake batter over the cooled crust. Bake for 50–60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.

4️⃣ Prepare the Banana Pudding Layer: In a bowl, whisk the banana pudding mix with milk until thickened. Spread a thin layer of pudding over the cooled cheesecake. Add a layer of sliced bananas and top with the remaining pudding.

5️⃣ Chill the Cheesecake: Refrigerate the assembled cheesecake for at least 4 hours or overnight to allow the flavors to meld.

6️⃣ Garnish and Serve: Before serving, top with whipped cream, crushed vanilla wafers, and fresh banana slices. Slice and enjoy!

Notes

  • For an extra layer of crunch, add a layer of crushed wafers between the banana slices and pudding.
  • Use ripe bananas for the best flavor in the cheesecake filling.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
