Ingredients

Scale
  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • ½ cup raspberry jam (or your favorite jam)
  • ½ cup powdered sugar (optional, for dusting)

Instructions

1️⃣ Prepare the Dough:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until fully incorporated.

2️⃣ Mix the Dry Ingredients:

  • In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.

3️⃣ Shape the Cookies:

  • Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb or the back of a spoon to create an indentation in the center of each cookie.

4️⃣ Fill with Jam:

  • Spoon a small amount of raspberry jam into each indentation, filling it about halfway.

5️⃣ Bake the Cookies:

  • Bake for 10–12 minutes, or until the edges of the cookies are lightly golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

6️⃣ Optional Finishing Touch:

  • Once cooled, dust the cookies with powdered sugar for an extra touch of sweetness and elegance.

Notes

  • You can substitute raspberry jam with strawberry, apricot, or any fruit jam of your choice.
  • Make sure the jam doesn’t overflow during baking to keep the thumbprint intact.
  • Store the cookies in an airtight container at room temperature for up to one week.
