Ingredients

Scale
  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon chili powder (optional, for heat)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan (for serving)

Instructions

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 3-4 minutes, until softened and translucent.
  • Add the garlic and ginger, and sauté for another 1-2 minutes until fragrant.
  • Add the chicken pieces to the pot, season with salt and pepper, and cook for 5-7 minutes, stirring occasionally, until the chicken is browned on all sides.
  • Sprinkle in the curry powder, cumin, turmeric, cinnamon, and chili powder (if using). Stir to coat the chicken and onions in the spices.
  • Add the diced sweet potatoes, coconut milk, and chicken broth to the pot. Stir to combine and bring the mixture to a simmer.
  • Reduce heat to low, cover, and cook for 20-25 minutes, or until the sweet potatoes are tender and the chicken is cooked through.
  • Taste the curry and adjust seasoning if necessary, adding more salt or pepper as needed.
  • Serve the curry over cooked rice or with naan bread, garnished with fresh cilantro.

Notes

  • For extra creaminess, you can add a dollop of plain yogurt or sour cream when serving.
  • If you prefer a spicier curry, add more chili powder or a chopped fresh chili to the pot.
  • You can substitute the chicken with tofu or chickpeas for a vegetarian version.
