Instructions

  • Preheat the oven to 375°F (190°C). Prepare a roasting pan by lightly greasing it or lining it with foil.
  • Prepare the cranberry glaze: In a small saucepan, combine cranberries, balsamic vinegar, brown sugar, olive oil, minced garlic, Dijon mustard, rosemary, and thyme. Bring to a simmer over medium heat. Stir occasionally and cook until the cranberries burst and the sauce thickens, about 8-10 minutes. Remove from heat and set aside.
  • Season the beef: Pat the beef roast dry with paper towels. Rub the roast with olive oil, then season generously with salt and pepper.
  • Sear the beef: Heat a large skillet over medium-high heat. Once hot, sear the roast on all sides (about 2-3 minutes per side) until browned.
  • Roast the beef: Transfer the seared beef roast to the prepared roasting pan. Spoon half of the cranberry balsamic glaze over the top of the roast, reserving the rest for later.
  • Roast: Place the beef in the oven and roast for 45-55 minutes, or until the internal temperature reaches your desired level of doneness (120°F for rare, 130°F for medium-rare, 140°F for medium).
  • Rest the beef: Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
  • Serve: Slice the roast beef and drizzle the remaining cranberry balsamic glaze over the top. Serve with your favorite sides like mashed potatoes, roasted vegetables, or a fresh green salad.
