Ingredients

Scale
  • 1 cup fresh spinach, chopped
  • ½ cup dried cranberries, chopped
  • 8 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 large flour tortillas

Instructions

1️⃣ Prepare the Cream Cheese Mixture:

  • In a medium bowl, mix the softened cream cheese, mayonnaise, honey, Dijon mustard, salt, and pepper until smooth and well combined.

2️⃣ Add the Spinach and Cranberries:

  • Stir the chopped spinach and dried cranberries into the cream cheese mixture, ensuring an even distribution.

3️⃣ Spread the Mixture on Tortillas:

  • Lay the flour tortillas flat on a clean surface. Evenly spread the cream cheese mixture over the surface of each tortilla, leaving about a 1-inch border around the edges.

4️⃣ Roll and Slice the Pinwheels:

  • Carefully roll up each tortilla tightly, then slice them into 1-inch pinwheels using a sharp knife.

5️⃣ Chill and Serve:

  • Arrange the pinwheels on a serving platter. For best results, refrigerate them for at least 30 minutes before serving to help them set.

Notes

  • You can use whole wheat or spinach tortillas for added flavor and color.
  • To make this dish dairy-free, swap the cream cheese with a dairy-free alternative.
  • These pinwheels can be made a day ahead and stored in the fridge.
