Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 large potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for sautéing)
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  • Cook the Ground Beef:
    • In a large skillet, heat olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned and fully cooked, about 6-8 minutes.
    • Add the chopped onion and garlic, and cook for an additional 3-4 minutes until the onion is soft and translucent. Drain excess fat if needed.
    • Stir in the dried thyme, salt, and pepper, then remove from heat.
  • Prepare the Casserole:
    • In a mixing bowl, combine the cream of mushroom soup and milk, stirring until smooth.
    • In the prepared baking dish, layer the sliced potatoes, ground beef mixture, and soup mixture. Repeat layers, ending with a layer of the soup mixture on top.
  • Add the Cheese and Bake:
    • Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If desired, sprinkle breadcrumbs over the cheese for a crunchy topping.
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  • Finish Baking:
    • Remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
  • Serve:
    • Let the casserole sit for a few minutes before serving. Cut into squares and enjoy!
