Instructions

  • In a medium bowl, whisk together honey, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper to create the marinade.
  • Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (or up to 4 hours) to marinate.
  • Preheat your grill to medium-high heat or preheat the oven to 400°F (200°C).
  • For Grilling: Remove the chicken from the marinade and grill for 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C).
  • For Baking: Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Once the chicken is cooked, remove it from the heat and let it rest for 5 minutes.
  • Serve with lime wedges and garnish with fresh cilantro, if desired. Pair with rice, roasted vegetables, or a fresh salad.
