  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/2 cup chicken broth
  • 1/4 cup capers, drained and rinsed
  • 1/4 cup fresh parsley, chopped, for garnish
  • Lemon slices, for garnish (optional)

Instructions

  • Prepare the chicken:
    • Season both sides of the chicken breasts with salt and pepper.
    • Lightly dredge the chicken breasts in flour, shaking off any excess flour.
  • Cook the chicken:
    • Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and set aside.
  • Make the sauce:
    • In the same skillet, melt the butter over medium heat.
    • Add the lemon juice, chicken broth, and capers, stirring to combine. Bring the sauce to a simmer and cook for about 2 minutes, allowing the flavors to meld together.
    • Taste the sauce and adjust seasoning with salt and pepper as needed.
  • Return the chicken to the skillet:
    • Add the cooked chicken breasts back into the skillet with the sauce. Spoon the sauce over the chicken and simmer for an additional 2-3 minutes to reheat the chicken and allow the flavors to combine.
  • Serve:
    • Transfer the chicken to serving plates. Spoon the sauce over the chicken and garnish with freshly chopped parsley and lemon slices, if desired.

Notes

  • For extra flavor, add a splash of white wine to the sauce along with the chicken broth.
  • If you prefer a thicker sauce, you can simmer it for a few extra minutes to reduce.
  • Serve with pasta, rice, or vegetables for a complete meal.
  • To make this recipe gluten-free, simply replace the all-purpose flour with a gluten-free flour blend or cornstarch.
