Ingredients

Scale
  • For the Dough:
    • 3 cups all-purpose flour
    • 1 tsp salt
    • 1 tbsp sugar
    • 2 ¼ tsp instant yeast (1 packet)
    • 1 cup warm water (105–110°F)
    • 3 tbsp olive oil
  • For the Filling:
    • 1 ½ cups shredded mozzarella cheese
    • ½ cup grated Parmesan cheese
    • 1 ½ cups pepperoni slices
  • For the Topping:
    • 2 tbsp melted butter
    • 1 tsp garlic powder
    • 1 tsp dried Italian seasoning
    • 2 tbsp grated Parmesan cheese

Instructions

  • Prepare the Dough:
In a small bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes until foamy.
  • Mix Dough:
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  • Knead the Dough:
Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic, or use a stand mixer with a dough hook for 5–7 minutes.
  • First Rise:
Place the dough in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
  • Preheat & Prep:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Assemble the Rolls:
Punch down the dough and roll it out into a large rectangle (about 12×16 inches). Spread the shredded mozzarella, Parmesan, and pepperoni evenly over the dough.
  • Roll & Slice:
Starting from the long edge, roll the dough tightly into a log. Slice the log into 12 equal pieces and place the rolls on the prepared baking sheet, cut-side up.
  • Second Rise:
Cover the rolls with a towel and let rise for 20–30 minutes.
  • Bake the Rolls:
Bake for 18–22 minutes, or until golden brown and bubbly.
  • Brush with Butter Mixture:
Mix melted butter, garlic powder, and Italian seasoning. Brush over the hot rolls and sprinkle with Parmesan cheese.
  • Serve:
Serve warm with marinara sauce for dipping, if desired.

Notes

  • Substitute pepperoni with turkey pepperoni or cooked sausage for variety.
  • Add a sprinkle of red pepper flakes for a spicy kick.
  • Rolls can be stored in an airtight container and reheated in the oven for 5–7 minutes.
