Ingredients

Scale
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 4 cups mixed salad greens (arugula, spinach, or kale)
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted walnuts or pecans
  • 1/4 cup dried cranberries
  • 1/4 red onion, thinly sliced

Instructions

  • Preheat your oven to 400°F (200°C).
  • Place the cubed sweet potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt, pepper, cumin, and chili powder, and toss to coat evenly.
  • Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly crispy at the edges, flipping halfway through.
  • While the sweet potatoes are roasting, prepare the dressing by whisking together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a small bowl.
  • In a large bowl, combine the roasted sweet potatoes, mixed greens, feta cheese, walnuts, cranberries, and red onion.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve warm or at room temperature.

Notes

  • You can substitute the feta with goat cheese or omit it for a dairy-free version.
  • Add grilled chicken or chickpeas to make this salad a more filling meal.
  • This salad can be stored in the refrigerator for up to 2 days, but it’s best served fresh.
