Delicious Southern Green Bean Casserole Recipe

Unlike traditional green bean casseroles, this Southern version is made with fresh green beans, a rich, creamy mushroom sauce, and topped with crispy fried onions for extra crunch.   • b fresh green beans, trimmed and cut into 2-inch pieces
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 cup grated cheddar cheese (optional)
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 1/2 cups crispy fried onions (divided)
  • 2 tbsp butter (optional, for greasing the dish)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish with butter or non-stick spray.
  2. In a large pot, bring water to a boil and blanch the green beans for about 5-7 minutes until they are tender but still bright green. Drain and set aside.
  3. In a separate bowl, combine the cream of mushroom soup, sour cream, milk, garlic powder, onion powder, and grated cheddar cheese (if using). Stir until smooth. Season with salt and pepper to taste.
  4. Add the drained green beans to the soup mixture, and stir to combine until the green beans are evenly coated in the creamy sauce.
  5. Pour the green bean mixture into the prepared casserole dish and spread it out evenly.
  6. Top with 1 cup of crispy fried onions, gently pressing them into the mixture.
  7. Bake the casserole uncovered for 25-30 minutes, or until it’s hot and bubbly.
  8. Remove from the oven, and top with the remaining 1/2 cup of crispy fried onions. Return to the oven and bake for an additional 5-7 minutes, or until the onions are golden brown and crispy.
  9. Let the casserole cool for a few minutes before serving.

Notes

  • For a lighter version, you can substitute the cream of mushroom soup with a healthier homemade cream sauce or a low-fat version of the soup.
  • You can make this dish ahead of time: Assemble the casserole (but don’t bake the onions on top), cover, and refrigerate for up to 24 hours. Bake before serving.
  • If you prefer a richer casserole, you can add a bit more cheddar cheese or a few tablespoons of Parmesan to the mixture.
  • You can substitute fresh green beans with frozen ones, but be sure to thaw and drain them thoroughly before use.
