Ingredients

Scale
  • 1 sheet puff pastry (thawed, if frozen)
  • 1 1/2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1/4 tsp ground nutmeg
  • Salt and pepper, to taste
  • 1 egg (for egg wash)

Instructions

  • Prepare the Spinach Filling: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the chopped spinach and sauté until wilted and any excess moisture evaporates, about 3-4 minutes. Remove from heat and let cool slightly.
  • Mix the Filling: In a medium bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, ground nutmeg, salt, and pepper. Stir in the cooked spinach and garlic mixture, mixing until smooth and evenly combined.
  • Assemble the Swirls: Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface. Spread the spinach and cheese mixture evenly over the entire sheet, leaving a small border around the edges.
  • Roll and Slice: Carefully roll the pastry sheet into a tight log, starting from one edge. Slice the rolled pastry into 1-inch wide swirls and place them on a parchment-lined baking sheet, spaced about 2 inches apart.
  • Egg Wash: Beat the egg in a small bowl and brush it over the top of each swirl to give them a golden finish when baked.
  • Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up. Remove from the oven and let cool for a few minutes before serving.
  • Serve: Enjoy warm or at room temperature, and serve as an appetizer or side dish.

Notes

  • Make-Ahead: You can assemble the swirls ahead of time and refrigerate them for up to 2 hours before baking. Just add a few extra minutes to the baking time if baking from cold.
  • Variations: Feel free to add other ingredients like sautéed onions, feta cheese, or a pinch of red pepper flakes for an extra kick.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F for about 10 minutes to crisp them up.
