Stuffed Mini Peppers are vibrant, bite-sized vegetables filled with a savory, cheesy mixture. These colorful treats make for an excellent appetizer, side dish, or snack. The mini peppers are tender yet crunchy, and the filling can be tailored to your taste, with a base of cheese, herbs, and spices. Perfect for parties or family dinners, they’re both delicious and visually stunning.

Ingredients

Scale
  • 1216 mini sweet peppers, halved and seeds removed
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 cup fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil, for drizzling
  • Optional: crumbled bacon or cooked sausage (for added protein)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the mini peppers in half lengthwise, removing the seeds and ribs. Arrange the halves on a parchment-lined baking sheet.
  3. In a medium bowl, combine the cream cheese, mozzarella, Parmesan, sour cream, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth and well combined.
  4. Spoon the cheese mixture into each pepper half, packing it in gently.
  5. Drizzle the stuffed peppers with olive oil and season lightly with salt and pepper.
  6. Bake for 15-20 minutes, or until the peppers are tender and the filling is golden and bubbly.
  7. Optional: Top with crumbled bacon or sausage before serving for extra flavor.
  8. Let the peppers cool for a few minutes before serving.

Notes

  • You can customize the filling by adding cooked ground turkey, chicken, or beef for a heartier dish.
  • Substitute the mozzarella with other cheeses like goat cheese or cheddar for different flavor profiles.
  • These peppers can be made ahead and refrigerated, then baked just before serving.
