Twice Baked Sweet Potatoes are a delicious and nutritious twist on the classic baked potato.   • 4 medium sweet potatoes
  • 2 tbsp olive oil
  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 tsp vanilla extract
  • 1/4 cup milk (or more for desired consistency)
  • Salt and pepper to taste
  • Chopped pecans or marshmallows (optional, for topping)

Instructions

  • Preheat oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and pat them dry. Rub the skins with olive oil and place them on a baking sheet.
  • Bake the sweet potatoes for 45-60 minutes, or until they are tender and easily pierced with a fork.
  • Once done, remove from the oven and let them cool slightly.
  • Cut the sweet potatoes in half lengthwise. Carefully scoop out the flesh, leaving a small border around the edges. Place the scooped-out flesh in a mixing bowl.
  • Add butter, brown sugar, cinnamon, nutmeg, vanilla, and milk to the sweet potato flesh. Mash until smooth and creamy. Season with salt and pepper to taste.
  • Spoon the mashed sweet potato mixture back into the skins.
  • If desired, top with chopped pecans or marshmallows for extra flavor and texture.
  • Return the filled sweet potatoes to the oven and bake for an additional 15-20 minutes, until golden and slightly caramelized on top.
  • Serve hot and enjoy!
