Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 cup molasses
  • 1 cup finely chopped pecans or walnuts (optional)
  • 1 1/2 cups powdered sugar, for coating

Instructions

  • Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Add Flavorings: Mix in vanilla extract, molasses, ginger, cinnamon, and cloves.
  • Incorporate Dry Ingredients: Gradually add the flour and salt to the wet mixture, stirring until just combined. Fold in the chopped nuts if using.
  • Shape the Dough: Scoop out small portions of dough (about 1 tablespoon each) and roll into balls. Place them on the prepared baking sheet, spaced 1 inch apart.
  • Bake: Bake for 10-12 minutes or until the edges are just set. Be careful not to overbake!
  • Cool: Allow the cookies to cool for 5 minutes on the baking sheet, then transfer them to a wire rack to cool completely.
  • Coat in Powdered Sugar: Roll the cooled cookies generously in powdered sugar, ensuring a thick, snowy coating.

Notes

  • Storage: Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
  • Nut-Free Option: Skip the nuts for a nut-free version that’s equally delicious.
  • Extra Spice: Add a pinch of nutmeg for a more robust spiced flavor.
