Ingredients

Scale
  • 2 cups mixed greens (arugula, spinach, or baby kale)
  • 1 ball of burrata cheese
  • 1 cup pomegranate seeds (about 1 pomegranate)
  • ½ cup roasted pecans or walnuts, chopped
  • ½ small red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • Fresh herbs for garnish (optional, e.g., mint or basil)

Instructions

  • Prepare the Salad Base: In a large bowl, toss together the mixed greens and sliced red onion. Drizzle with olive oil, and season with salt and pepper. Gently toss to combine.
  • Assemble the Salad: Arrange the dressed greens on a serving platter or individual plates. Tear the burrata into chunks and place them in the center of the greens. Scatter the pomegranate seeds over the salad.
  • Add the Nuts: Sprinkle the roasted pecans or walnuts over the top for a crunchy contrast to the creamy burrata.
  • Make the Dressing: In a small bowl, whisk together the balsamic glaze and honey until smooth. Drizzle the dressing over the salad just before serving.
  • Garnish and Serve: Optionally, garnish with fresh herbs like mint or basil for a touch of color and flavor. Serve immediately, and enjoy this festive dish!

Notes

  • Substitutions: If you can’t find burrata, fresh mozzarella can be a great alternative.
  • Nuts: Feel free to use any roasted nuts of your choice, such as almonds or pistachios, for added flavor and texture.
  • Make-Ahead: You can prepare the greens and pomegranate seeds in advance, but it’s best to assemble the salad just before serving to keep the burrata fresh and creamy.
  • Pomegranate Seeds: To easily remove the seeds from a pomegranate, cut it in half and tap the back of the fruit with a spoon over a bowl to release the seeds.
