  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup toasted pecans, chopped

For the Topping (Optional):

  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 tablespoon unsalted butter, melted

Instructions

  • Preheat the Oven and Prepare the Pan:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  • Mix the Dry Ingredients:
    • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  • Cream the Butter and Sugar:
    • In a large bowl, beat the butter and granulated sugar together until light and fluffy. This should take about 2–3 minutes.
  • Add Eggs and Vanilla:
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Combine Wet and Dry Ingredients:
    • Add the dry ingredients to the butter mixture in batches, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  • Fold in the Pecans:
    • Gently fold in the chopped toasted pecans.
  • Prepare the Topping (Optional):
    • In a small bowl, combine the brown sugar, chopped pecans, and melted butter. Sprinkle this topping evenly over the batter before baking.
  • Bake the Bread:
    • Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted into the center of the bread comes out clean.
  • Cool and Serve:
    • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

Notes

  • For extra flavor, try toasting the pecans in a dry skillet over medium heat for 3-4 minutes before adding them to the batter.
  • This bread freezes well. After baking, cool completely and wrap tightly before freezing for up to 3 months.
  • For a dairy-free option, you can use almond milk and a dairy-free butter substitute, although the texture may vary slightly.
