Ingredients

Scale
  • 2 (8 oz) packages cream cheese, softened
  • ½ cup jarred roasted red peppers, drained and chopped
  • ¼ cup green olives, pitted and chopped
  • ¼ cup Kalamata olives, pitted and chopped
  • ¼ cup artichoke hearts, drained and chopped
  • 2 tablespoons capers, drained
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped sun-dried tomatoes (optional)

Instructions

  1. Prepare the Cream Cheese Mixture:
    • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Add the roasted red peppers, green olives, Kalamata olives, artichokes, capers, olive oil, Italian seasoning, and garlic powder. Mix until everything is well combined.
  2. Form the Log:
    • Lay a piece of plastic wrap on your work surface.
    • Spoon the cream cheese mixture onto the plastic wrap and shape it into a log. Gently roll the mixture, using the plastic wrap to help form a tight, cylindrical shape. Refrigerate the log for at least 2 hours to allow the flavors to meld.
  3. Add the Finishing Touches:
    • Once the cream cheese log has chilled, unwrap it from the plastic wrap. Sprinkle the top with grated Parmesan cheese and chopped fresh parsley. If you like, you can also roll the log in chopped sun-dried tomatoes for extra flavor and color.
  4. Serve:
    • Slice the log into rounds and serve with crackers, fresh baguette slices, or vegetable sticks like celery and carrot for dipping.
  5. Enjoy:
    • This antipasto cream cheese log is perfect for entertaining and will be a guaranteed crowd-pleaser!

Notes

  • For a spicier version, consider adding a small amount of finely chopped jalapeños or red pepper flakes to the cream cheese mixture.
  • You can make this appetizer a day ahead. Just wrap the log tightly in plastic wrap and refrigerate it overnight.
  • This recipe is versatile, so feel free to swap out some ingredients like olives or artichokes with other antipasto favorites like pepperoncini, marinated mushrooms, or prosciutto.
