- 2 tablespoons olive oil, divided
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Juice of 1 lime
- Salt and pepper, to taste
- Warm tortillas (flour or corn) for serving
- Fresh cilantro, chopped (optional, for garnish)
- Sour cream, salsa, or guacamole for topping (optional)
- Prepare the Shrimp:
- In a bowl, toss the shrimp with 1 tablespoon of olive oil, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper (if using), lime juice, and salt and pepper to taste. Let the shrimp marinate for 10-15 minutes.
- Cook the Vegetables:
- Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the sliced bell peppers and onions and sauté for 4-5 minutes, until the vegetables are softened and slightly charred. Add the minced garlic and cook for another 1 minute, until fragrant. Remove the vegetables from the skillet and set aside.
- Cook the Shrimp:
- In the same skillet, add the marinated shrimp and cook for 2-3 minutes per side, or until the shrimp are pink and cooked through.
- Combine and Serve:
- Return the cooked vegetables to the skillet with the shrimp and toss everything together to combine and heat through.
- Assemble the Fajitas:
- Serve the shrimp and vegetable mixture in warm tortillas. Garnish with chopped cilantro and serve with your favorite toppings, such as sour cream, salsa, or guacamole.
