Ingredients

Scale
  • 1 cup fresh pineapple, finely chopped (or canned, drained)
  • ½ cup sweet chili sauce
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 clove garlic, minced
  • ½ tsp grated ginger
  • ½ tsp red chili flakes (optional, for extra heat)
  • 1 tsp cornstarch mixed with 2 tsp water (for thickening)

Instructions

1️⃣ Combine Ingredients:

  • In a small saucepan, combine pineapple, sweet chili sauce, rice vinegar, soy sauce, honey, garlic, ginger, and chili flakes (if using).

2️⃣ Simmer the Sauce:

  • Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it cook for 5–7 minutes, stirring occasionally.

3️⃣ Thicken the Sauce:

  • Add the cornstarch slurry to the saucepan and stir well. Continue to simmer for 2–3 minutes until the sauce thickens.

4️⃣ Blend (Optional):

  • For a smoother texture, use an immersion blender to blend the sauce to your desired consistency.

5️⃣ Cool and Store:

  • Remove the saucepan from heat and let the sauce cool. Transfer to a jar or container and refrigerate for up to one week.

Notes

  • For a more pronounced tang, increase the rice vinegar slightly.
  • Adjust the heat level by adding more chili flakes or reducing the amount of sweet chili sauce.
  • This sauce pairs wonderfully with grilled chicken, shrimp, or roasted vegetables.
