  • 1/2 cup powdered sugar (plus extra for coating)
  • 2 tsp espresso powder
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup finely chopped pecans or walnuts (optional)

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy.
  • Add Espresso and Vanilla:
    • Dissolve the espresso powder in 1 tsp of warm water and add it to the butter mixture along with the vanilla extract. Mix well.
  • Incorporate Dry Ingredients:
    • Gradually mix in the flour and salt until combined. Fold in the chopped nuts, if using.
  • Shape the Dough:
    • Scoop out about 1 tablespoon of dough and roll into small balls. Place them on the prepared baking sheet, spaced about 1 inch apart.
