Instructions

  • Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
  • Mix the Wet Ingredients:
    • In another bowl, whisk together the Greek yogurt, milk, eggs, and vanilla extract until smooth.
  • Combine Wet and Dry Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix; the batter should be slightly lumpy. Add a bit more milk if the batter is too thick.
  • Preheat the Pan:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  • Cook the Pancakes:
    • Scoop about 1/4 cup of batter onto the hot skillet for each pancake. Spread slightly with the back of a spoon if needed.
    • Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes, or until golden brown.
  • Serve:
    • Stack the pancakes on a plate and serve warm with your favorite toppings like maple syrup, honey, fresh berries, or a dollop of Greek yogurt.
