Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 lb gnocchi (fresh or frozen)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually 2-3 minutes, or until they float to the surface). Drain and set aside.
  • Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, thyme, and oregano, and cook for 6-8 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Prepare the sauce: In the same skillet, add the butter and minced garlic. Cook for 1-2 minutes until the garlic becomes fragrant, making sure not to burn it.
  • Add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let it cook for 2 minutes.
  • Stir in the heavy cream and Parmesan cheese, and continue to cook for 3-4 minutes, until the sauce thickens and becomes creamy.
  • Assemble the dish: Add the cooked gnocchi and chicken back into the skillet. Stir to coat everything in the creamy sauce. Cook for another 2-3 minutes until the gnocchi is slightly crispy and everything is heated through.
  • Garnish with chopped parsley and serve immediately.

Notes

  • For extra flavor, you can add a squeeze of lemon juice or zest to the sauce before serving.
  • If you prefer a lighter version, you can use half-and-half or milk instead of heavy cream.
  • You can also add vegetables like spinach or sun-dried tomatoes for an extra boost of flavor and color.
