Ghirlanda di Pane, or Italian Bread Wreath, is a stunning centerpiece for your holiday table or special gatherings. This beautifully braided bread is golden brown on the outside and soft on the inside, with a lightly chewy texture that pairs perfectly with olive oil, cheese, or cured meats.   • For the Dough:
    • 3 ½ cups all-purpose flour
    • 1 ½ tsp salt
    • 1 tbsp sugar
    • 2 ¼ tsp instant yeast (1 packet)
    • 1 ¼ cups warm water (105–110°F)
    • 2 tbsp olive oil
  • For the Topping:
    • 1 egg (beaten, for egg wash)
    • Fresh rosemary sprigs (optional)
    • Coarse sea salt

Instructions

  1. Activate Yeast:
    In a small bowl, mix warm water and sugar, then sprinkle yeast on top. Let it sit for 5–10 minutes until foamy.
  2. Make the Dough:
    In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the Dough:
    Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–7 minutes.
  4. First Rise:
    Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
  5. Shape the Wreath:
    Punch down the dough and divide it into three equal portions. Roll each portion into a long rope. Braid the ropes together, then shape the braid into a circle and pinch the ends to seal. Place on a parchment-lined baking sheet.
  6. Second Rise:
    Cover the shaped wreath with a towel and let it rise for 30 minutes.
  7. Prepare & Bake:
    Preheat your oven to 375°F (190°C). Brush the bread with the beaten egg and sprinkle with coarse sea salt. Add rosemary sprigs for decoration, if desired. Bake for 25–30 minutes, or until golden brown.
  8. Cool & Serve:
    Allow the bread to cool slightly before serving. It’s perfect with olive oil and balsamic vinegar for dipping or alongside your favorite cheeses.

  • Customize the wreath by adding toppings like sesame seeds, poppy seeds, or grated Parmesan.
