Ingredients

Scale
  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cups fresh spinach leaves
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions

1️⃣ Brown the sausage:
In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the sausage and cook until browned, breaking it into crumbles as it cooks. Remove the sausage with a slotted spoon and set aside.

2️⃣ Sauté the aromatics:
In the same pot, add the diced onion and sauté for 3–4 minutes until softened. Stir in the garlic, Italian seasoning, and red pepper flakes, cooking for 1 minute until fragrant.

3️⃣ Build the soup base:
Pour in the chicken broth and diced tomatoes. Bring to a simmer, scraping up any browned bits from the bottom of the pot.

4️⃣ Add the tortellini:
Stir in the tortellini and cook for 5–7 minutes, or until the tortellini are tender.

5️⃣ Finish with cream and greens:
Reduce the heat to low. Stir in the heavy cream, cooked sausage, spinach, and Parmesan cheese. Cook for another 2–3 minutes until the spinach wilts and the soup is heated through.

6️⃣ Serve:
Season with salt and pepper to taste. Garnish with fresh basil or parsley, and serve warm with crusty bread.

Notes

  • For a lighter option, use turkey sausage or swap heavy cream for half-and-half.
  • Add mushrooms or zucchini for extra veggies.
  • Leftovers can be refrigerated for up to 3 days; reheat gently on the stovetop.
